What topics should be covered in a diversity course?

I have asked to provide a course on Diversity/Cultural Awareness. I am familiar with the South Asian cultures/faiths-but what should be included in a standard Diversity course? This training is being made mandatory by Govt. Please suggest typical content, approach, links for info sources, etc.
Plus on Cultures- what should be included when talking about European and Afro-Caribbean cultures?
